A commissary is a licensed, inspected commercial kitchen used for:

  • Prepping ingredients

  • Dumping wastewater

  • Cleaning and restocking

In most areas, a commissary agreement is required by the health department. Some owners rent shared space, partner with local cafes, or even use churches or community kitchens. Your health inspector will let you know what’s acceptable.
